家裡肉鬆沒了, 換換口味, 炒個鮭魚鬆來吃吧!
如果你知道炒魚鬆是這麼的簡單, 只需要用一點時間, 就可以免去偷帶魚肉鬆過海關時那種七上八下, 害怕被逮的感覺, 真是好值得啊!
爲了不要食言而肥(因為已經夠肥啦!), 昨晚拼了老命做抹茶冰淇淋.
其實跟拼了老命還差蠻遠的, 嘻嘻! 前天打了超級濃的豆漿, 想說拿來做豆漿冰淇淋好了. KDD 看我要做冰淇淋, 很期待的問了聲 ~ 抹茶的嗎? 我說是豆漿的, 看他一付失望的樣子, 想說,好吧, 拿豆漿做底來做抹茶的好了. 豆漿抹茶冰淇淋也不錯啦!
做冰淇淋其實是一件最最簡單不過的事, 只要把握以下兩點原則, 失敗幾乎是不可能的事.
1. 冰桶一定要冷凍超過24 小時. 不要因為冰桶看起來已經冰的硬梆梆就去用它, 猴急是失敗的開始, 噗!
2. 放進去的原料也一定要冰凉地透徹. 煮好的原料一定要冰涼透了才可以用. 有時我急著吃會把它放入冷凍櫃快速降溫.
家用冰淇淋機分為兩種, 一種是冰桶要先冰過, 我用的是這種. 這型機器很便宜, 缺點是會佔冷凍庫位子. 做完一桶得把桶子回冰24小時後才能再做. 另一種是機器本身就有冷卻能力,(我朋友有) 這種機器貴很多, 優點是你可以一桶接一桶地製造冰淇淋.
兩機器製造出來的冰淇淋品質上並沒有差異, 容量也相當, 我對我的相當滿意.
再來談談原料. 我把原料大致略分兩種 ~ 有加蛋的跟沒加蛋的.
有加蛋的我不常做, 因為麻煩, 必須煮過再急速降溫, 再加上我不是很願意吃個冰淇淋要吃這麼多蛋, 這類的冰淇淋我都把它簡化成無蛋的, 抹茶冰淇淋就是.
無蛋的冰淇淋超快速好做, 有用鮮奶油, 就做成冰淇淋. 沒用鮮奶油, 就做成 Sorbet. 就是這麼簡單喔!
我的機器 ~ Cuisunart Ice Cream Maker. 算是處處都是, 最普通的機器.
要做抹茶冰淇淋絕對少不了的抹搽粉. 去年去日本玩帶回來的茶道級抹搽粉, 好的抹搽粉是成功的一半.
顏色艷麗味道足. 能至少用日本的搽粉是最好的. ( 我又托人帶了一堆, 嘻!)
一次打兩量杯份的鮮奶油剛好. (我這次放一杯鮮奶油, 一杯豆漿) 先倒半杯出來, 加熱, 然後與2 大匙+ 2 小匙的抹茶粉充分混和. 這是最困難的步驟, 為什麼?
你需要抹茶刷! 如果沒有, 抹搽粉真的細到無法攪散啊! 我當初就是想應該用打蛋器也可以, 所以沒有買, 結果還是得托人從日本帶......笨死咧!
用茶刷把粉攪和均勻.
之後變濃濃的.
然後先加入半杯冷的鮮奶油. 調勻後再加入剩下的一杯. 千萬別像我照片裡一樣, 把抹茶漿全部倒入鮮奶油裡, 那樣很難調勻. 我老人家記性不好, 老是忘記, 真是氣人!
調勻後加入兩大匙蜂蜜. 我有時用白糖 1/3 杯取代. 再度調勻. (或是第一次調完抹搽粉就趁熱加入更方便.)
全部弄好後我會把它放進冰箱再冰一下. 然後就可以做啦! 有人說要等機器動了才加入原料, 這樣才不會黏邊. 我覺得是一樣啦! 都會黏一點的, 吃掉就好啦!
全部倒入後計時18 分鐘(因廠牌而異) !
Voila!
剛做好很軟, 要先裝罐冷凍個半小時才吃. 這期間別忘了挖黏邊的起來吃喔!
就醬子! 很簡單吧!
如果做芒果冰淇淋, 我就是用兩杯切好的熟芒果, 加上兩杯鮮奶油, 1/3 杯白糖,一小匙檸檬汁(不能多喔! 否則會吃起來像優格冰淇淋, 也超好吃的就是了) 全部原料放進果汁機打成汁, 然後就放進冰淇淋機裡. 沒有抹茶刷的人可以先做這個, 保證好吃喔! 你也可以用一杯鮮奶來取代一杯鮮奶油. 比較不肥, 但記住鮮奶油越多會越綿密喔! 如果完全不要鮮奶油而用水取代, 就是Sorbet啦! 做Sorbet時放入一大匙伏特加可以幫助成品不要結成硬冰喔!
所以說啦! 台灣這麼多水果, 真是做冰淇淋的好地方哪! 趕快動手吧! 還等什麼?
所以決定減肥第一招 ~ 早晨走路去火車站坐火車, 晚上下班也走回家不坐車. 省車油錢又可減肥, 摸蛤粒兼洗褲, 何樂而不為?
減肥第二招 ~ 少做麵包蛋糕, 少吃澱粉類總可以瘦一點了吧? 唉! 實在有點太高估了自己, 沒兩天就手癢啦! 做了 Lemon Cheese Cake 跟台式泡菜, 只好吃少一點囉!
Lemon Cheese Cake ~ 肥長好吃! 肥長好吃! 一做好馬上切一半起來, 秉著要肥大家一起肥的一貫原則 - 包起來送朋友吃!
上次鹹鴨蛋泡完, 罐子空出來剛好拿來泡泡菜! 這次泡的有點兒太酸....不過還是很好吃...
結果為了好好享受一下泡菜, 跑去買臭豆腐來配......又吃了一堆........真是...唉.....要瘦我看是難! 難! 難!
KMM 後記 ~ 到現在走了十天路, KDD 每天走我兩倍的路(因為他要走出來接我), KDD減了 17 磅, 我呢? 只有5磅啦! 多不公平啊! 為什麼有人就可以瘦得這麼快???

This is Banana ice cream with rum and praline. I was gonna make some green tea ice cream since I still need to make some minor adjustments in the ingredients, but then I saw the bananas and I knew they were gonna go bad if I don't use them......Voila!! Delicious just the way it is!! Homemade is the king!!!
I think I am in love of using Korean pancake mix. So easy, just mix with water then put in your favorite food. I used scallions this time which was delicious. I am going to use asparagus next week. Such an easy thing to whip up as breakfast.
One of the easiest thing to do when you feel lazy while making buns - make all of them into ball-shaped buns. Scallion Buns.
Tuna buns as requested.
Then I quickly roasted up a Center Loin Pork Roast. Again, with rosemary, my favorite herb. Very very juice. Somehow I rarely cook pork, but I should start cooking pork more often, they are just too delicious to miss.
I finished off the sparkling wine from Saturday night. This is a good wine, very light, a little on the sweet side but just perfect for me. And, most importantly, drinking it won't break your bank.
And for dessert, I made some green tea ice cream. Such a difference when ice cream is home made. I used the Mocha Powder I bought in Japan from last year. It was very very good. I made it a bit too rich this time...but still good....just need some minor adjustment...
Friends canceled on us last Saturday night but I already had the food ready, so, what the heck, truffle mouse pate, salami...sparkling wine...their loss.
Okay, buns is a sure thing on Sundays, almost. Whipped up some cinnabuns and custard buns. Frankly, I am not a cinnamon lover, actually, not at all. But, this bun is so popular that I just make it from time to time. I mean, I can always just have the custard buns...
Then for dinner, we had the left over food from Friday night and Saturday night. Some chicken over rice and this " best in the city" British Fish and Chips from A Salt and Battery. Not bad at all, I have to say. And then I quickly whipped up a Lichee Martini on the rocks. Voila! Here you go!
Finally got a chance to do the salty eggs (鹹鴨蛋) which I had been meaning to do for months. Here they are. All 21 of them, will be ready on 05/08/07. We will see. Can't wait!
And last but not least, my wholewheat cranberry pecan bread. Crust was crispy and inside was juicy and chewy. Perfectly done! Need I say more?

Afternoon tea -
Batch 1 - Fresh baked hot dog buns. This time I made 7 with patterns and 3 wrap arounds.
Batch 2 - Red bean buns, Milk buns and Scallion buns.

Dinner - Roasted boneless leg of lamb with rosemary and cous cous salad.
Dessert - Flan, which I made previously but forgot to take photos...
